The beet salad bowl is the result of tossin’ the whole garden in a bowl. Try to list all the ingredients five times fast: brown rice, black beans, carrots, cabbage, cucumber, tomato, onion, bell peppers, Kalamata olives, and marinated beets. (Did the carrots-cabbage-cucumber string trip you up, too?) Nestled on a bed of lettuce and topped with Italian dressing, this dish is the bee’s knees. We have the bees to thank for it anyway — shoutout pollinators!
‘Tis the season: eggplant season. You know what that means! Oh, you don’t? Let us explain: the Mediterranean platter is back. Sourced locally, eggplant transforms into babaganoush, paired with hummus, hemp seed tabouli, raw falafel, Mediterranean tofu bites, fresh veggies, olives, and a tortilla. We’re just egg-planting the seed that you get in on this goodness ASAP.


Portia’s very own backyard basil is doing big things these days. The hometown hero stars in the pesto quesadilla, with costars rice, sawsage (vegan, that is), tomatoes, mushrooms, onions, and cheeze (also vegan, that iz).
On the fresher side, you can try the pesto with the Zucchini Noodles Genovese, tossed and topped with sundried and fresh tomatoes, red bell peppers, kalamata olives, capers and hemp seeds on a bed of lettuce– mmm-mm!
We also highly recommend adding the pesto to the super Cindy breakfast wrap. Tofu egg, cheeze, sawsage crumbles, tomato, and lettuce meet homefries and coconut bacun to create what we can only call a delicacy.


Lastly, we’ll enlighten you on the existence of the Portia’s Cafe waffle. The Belgian-style waffle comes with Ohio maple syrup and topped with, well, basically whatever you want. Name a fruit, and you’ve got it.
The smoothies ain’t half bad either. We don’t want to overwhelm you, but the purple haze sends us into a daze.
