Many will refer to it as Mexican food, after all, its name is Yabo’s Tacos, (but it really isn’t). Some may call it Tex-Mex,( maybe close, but still misses the mark) – Still others will say it is Baja Style – (but not so much). Scott Boles, partner, chef and menu developer says he took his favorite flavors from around the country and put those into the menu, for example, incorporating his favorite rendition of BBQ from North Carolina, and his blackened fish seasoning he credits to New Orleans. His menu requirements also included using only fresh fabulous ingredients – providing great taste, that would be affordable to everyone. “If adding pasta makes a dish Italian, then I guess you can say we are Mexican, all I know is that I am thrilled with the comments from the people who have eaten from the menu, they love the food, and are thrilled with the value.
