Others open a brewery after spending three decades tinkering with beer recipes like a mad scientist with a home brewing kit. Enter: Bridge’s End Brewing Co., the newest taproom in Shawnee Hills, and probably the only one in Ohio founded by a GI surgeon.
Meet the Doc
Dr. Bill Schirmer didn’t just wake up one day and think, “Hey, let’s do beer now.” He started brewing way back in 1992, and he kept detailed records of every single batch — tweaks, notes, successes, mishaps, all of it. A true type-A king.
You see, this wasn’t a hobby. He was playing the long game, long before he even knew it.
What started as a creative release and a way to decompress slowly turned into a passion project, which slowly turned into…

…A Real-Deal Brewery
Bridge’s End Brewing is now open, pouring some seriously crisp and clean European-inspired beers like German pilsners, Czech pale ales, maibocks, and Belgian blondes. If you’re into smooth lagers that don’t taste like you licked a pine tree, you’ll feel right at home here.
And don’t sleep on the space, either. The taproom is bright, welcoming, and clearly built by someone who’s been dreaming about this for a long time. The menu’s got some thoughtful small bites and pizzas, too. Nothing overly fancy, just really solid food that goes down easy with a cold pint.

The whole vibe is laid-back, no-fuss, and laser-focused on quality which, given Dr. Bill’s background, feels very on-brand. Bridge’s End isn’t some corporate craft beer replica. It’s a deeply personal project brought to life after 30 years of brewing, learning, and refusing to settle for “good enough.”
Long story short: this place has heart, history, and surgically good beer. Go.
